Beppu Reimen (Cold Noodles)

Local cold noodles of the hot spring town of Beppu. They feature thick, very firm noodles made with buckwheat and wheat flour, served in a light Japanese-style broth made from beef bones and seafood. Kimchi, beef chashu, boiled egg and green onion are the standard toppings. It is said to have grown from a shop started by someone who returned from Manchuria. Many shops serve it all year, not only in summer. Cold noodles are a treat after a hot spring bath, and the kimchi adds a nice kick.

A brand of marbled flounder caught in the sea below the site of Hiji Castle in Hiji. As sashimi, the translucent white flesh offers a refined sweetness and a crisp bite. The season is early summer, and restaurants in Hiji serve it. The town is so proud of it that it holds a festival for the fish.

Zabieru (Bean Paste Butter Cake)

One of Oita's best-known souvenir sweets, made by an Oita confectioner. Buttery, moist Western-style dough is wrapped around white bean paste, or bean paste with rum-soaked raisins, and baked. The name honors Francis Xavier, the missionary who visited Oita, then Bungo, in the Sengoku period and spread Christianity. Its black and gold packaging, evoking nanban culture, is striking.
