Omi Champon (Dashi-Broth Noodles)

่ฟ‘ๆฑŸใกใ‚ƒใ‚“ใฝใ‚“

Local noodles born in Hikone. Unlike Nagasaki champon, it features a clear soy sauce broth flavored with Japanese dashi of bonito and kelp. It is piled with cabbage, bean sprouts, carrot, wood ear mushrooms and pork, and the sweetness of the vegetables melts into the broth. The local way is to add vinegar partway through to change the flavor. Light yet satisfying thanks to the vegetables, it is served at many shops around the prefecture. It is a welcome meal when you need more vegetables on your trip.

Funa-zushi (Fermented Crucian Carp Sushi)

ใตใชใšใ—

Shiga's signature local dish: nigorobuna crucian carp from Lake Biwa salted and then fermented with rice for a long time. It is a type of narezushi, said to be a root of Japanese sushi. It has a strong, distinctive aroma and sourness that divide opinion, but many people become hooked on its rich, cheese-like umami. It is sliced thin as a drinking snack or eaten in ochazuke. It is sold at long-established shops and souvenir stores. First-timers should try a little at a time.

Omi Beef Sukiyaki

่ฟ‘ๆฑŸ็‰›ใ™ใ็„ผใ

Sukiyaki made with Omi beef, sometimes counted among Japan's three great wagyu. It features fine marbling and fat with a mellow, elegant sweetness. Omi beef has a long history: in the Edo period, the Hikone domain presented beef pickled in miso to the shogun's family. Many restaurants serve it Kansai style, searing the beef in a pot greased with beef fat, seasoning with sugar and soy sauce, and eating it with beaten egg. Enjoy it at long-established restaurants in Omihachiman or Hikone.

Saba Somen (Somen Simmered with Mackerel)

้ฏ–ใใ†ใ‚ใ‚“

A local dish of the Kohoku area around Nagahama. Grilled mackerel is simmered sweet and savory, and somen noodles are cooked in the same broth and served together. The mackerel's flavor soaks into the noodles, making it good with rice too. It is said to come from a custom in which a bride's family sent grilled mackerel to her new home during the busy rice-planting season. Try it at restaurants around Kurokabe Square in Nagahama. The pairing of toasty mackerel and soaked noodles is like nothing else.

A specialty of Omihachiman: bright red konnyaku simmered sweet and savory in soy sauce. The red color comes from iron oxide. One story says flamboyant warlord Oda Nobunaga had konnyaku dyed red. It looks startlingly red, but it tastes like ordinary konnyaku, well soaked in flavor. You can find it at diners and souvenir shops in Omihachiman.
