On the north side of Mt. Fuji, Yamanashi grows more grapes and peaches than anywhere else in Japan. It is known for hoto, a hearty noodle stew, and shingen mochi with kinako and syrup.

Kofu Tori Motsu-ni (Glazed Chicken Giblets)

Kofu's local dish of chicken gizzards, hearts, liver and kinkan, the yolks before they become eggs, simmered with sugar and soy sauce into a shiny glaze. It is cooked quickly over high heat so the sauce coats the giblets. It is said to have started as a staff meal at a Kofu soba shop, and it became known nationwide after winning the B-1 Grand Prix. It is often served as a side dish at soba shops and pairs perfectly with drinks. The glossy look alone is enough to whet your appetite.

Koshu Katsudon (Cutlet on Rice with Sauce)

In Kofu and around, katsudon means not cutlet simmered with egg but shredded cabbage on rice, topped with a pork cutlet and sauce. The egg version is often called nikatsudon, or simmered katsudon, to tell them apart. The simple combination of crispy cutlet, cabbage and sauce is satisfying. You can find it at diners and soba shops in Kofu. If it is your first time, watch out for the difference when ordering. It is generously portioned and very filling.

Hoto (Flat Noodle Miso Stew)

Yamanashi's most famous local dish. Wide, thick flour noodles are simmered without pre-boiling in a miso broth with pumpkin, Chinese cabbage, carrot, mushrooms and other vegetables. The starch from the noodles thickens the broth and blends with the sweetness of the pumpkin, warming you to the core. Legend says the warlord Takeda Shingen spread it as food for his troops. It is often served piping hot in an iron pot. Enjoy it together with sightseeing at Mt. Fuji or Lake Kawaguchi, especially in the cold season.

Yoshida Udon (Extra-Firm Udon)

The local udon of Fujiyoshida, said to be the hardest in Japan and known for its strong bite. The classic bowl has a soy sauce and miso broth topped with boiled cabbage and sweet-savory simmered horse meat. It is eaten with suridane, a spicy condiment of chili, sansho pepper and more. In Fujiyoshida, once a weaving town, it was loved as a filling meal for workers. There are many udon shops in the city. Combine it with a visit to Mt. Fuji.

Awabi no Nigai (Simmered Abalone)

A Kofu specialty of abalone simmered in a soy-based sauce. Why is abalone famous in landlocked Yamanashi? Legend says that in the Edo period, abalone from Suruga Bay was marinated in soy sauce and carried by horse, and by the time it arrived the flavor had soaked in perfectly. The tender abalone has deep umami and a pleasant chew. It is a luxury item bought from Kofu's long-established shops as a gift or for special occasions. Slice it thin and savor it a little at a time.

A Yamanashi summer dish in which hoto noodles are chilled and dipped into a warm sauce. The dipping sauce is soy-based and often contains mushrooms, chicken and fried tofu. Basashi (Horse Meat Sashimi)

Yamanashi has long had a culture of eating horse meat, and horse sashimi is popular. One reason is said to be the many horses that traveled the Koshu Kaido highway. It is mostly lean red meat, light yet full of flavor the more you chew. The classic way is to eat it with garlic or ginger and sweet soy sauce. You can try it at izakaya, soba shops and butcher shops in Kofu. Horse meat is also used as a topping for Yoshida udon. The lean meat goes well with drinks.

Shingen Mochi (Rice Cake with Kinako and Syrup)

Yamanashi's signature sweet: soft mochi coated in roasted soybean flour, eaten with brown sugar syrup. It comes in a small container wrapped in a plastic sheet like a furoshiki cloth. To eat it, open the wrapping, pour the syrup over the mochi and mix it well with the soybean flour. The flour spills easily, so spread the plastic wrapping out as a plate. It is a classic Yamanashi souvenir sold at stations and highway rest areas. Adjusting the amount of syrup as you go is part of the fun.

A mochi as clear as water and wobbly, made by a confectioner in Hokuto. It is eaten with roasted soybean flour and brown sugar syrup. Made with water from Hokuto, a town known for its famous spring water, it looks like a giant water droplet and became a big talking point. Because it can only hold its shape for a short time, it is usually eaten only in the shop, and it is sold only for limited periods, such as summer. It is a cool-looking summer treat worth the trip. It is also beautiful and very photogenic.

Tsuki no Shizuku (Sugar-Coated Grapes)

A traditional Kofu sweet made by coating fresh grapes in a syrup of ground sugar and letting it set. You get the crunch of the white sugar shell and the juicy sweet-tart grape inside. The name is said to come from its beautiful look, like drops of moonlight. It is a sweet only a grape-growing region like Yamanashi could make, and it is often produced only from autumn to winter. When you bite in, grape juice bursts out.
